Believe it or not I’m sick again!
This never happened to me before, not even when I was a little kid I got sick every month…
To help myself recover yesterday night I made what my mom used to make for me when I was sick: meatball soup!
Try this out to warm these cold winter nights
Ingredients (serves 6):
- 1 cup carrot, diced
- 1 cup celery, diced
- 1/2 cup onion, chopped
- 1 cup potato, diced
- 1 ripe tomato
- 3 tsp salt
- 300 g ground beef
- 1 egg
- 2 slices of bread
- 1/4 cup parmesan
- 1/2 tsp sage
- fresh chopped parsley
- 1/4 tsp black pepper
- 200 g pasta
Chop up a carrot
then a potato
half an onion
and some celery
throw all the veggies in a pot
fill it up with water and bring it to a boil. Oh, add 1 ripe tomato as well…I almost forgot about it
In a bowl combine ground beed (you can also use pork or half and half), 1 tsp salt and 1/2 tsp of sage
add in 2 slices of bread (soaked and squeezed), 1 egg, 1/4 cup grated parmesane cheese and some fresh chopped parsley
Mix all the ingredients together
then using your hands, shape the mixture into small balls
Now that the water is boiling add in 2 tsp of salt and slowly drop in the meatballs
Cover with a lid and let simmer for about 1h and 30 min
Meanwhile grab some short/small pasta. This is what I had on hand but any other kind of small cut past would do
Boil it accoring to package instructions.
In a serving bowl ladle some pasta
and some soup
and enjoy, nice and warm
You can also add some grated parmesan cheese if you like
