During my trip in India, 2 years ago, I’ve had the best (and I mean THE BEST) rice pudding EVER! Yesterday morning I made it at home and I’ll tell you something, it tasted a lot like the one I had in Goa.
Rice Pudding is quite easy to make and it’s a great idea for breakfast.
Here is the recipe!
Ingredients (for 2 servings):
- 2-1/2 cup whole milk
- 1/3 cup rice (long or short grain)
- 1/8 tsp salt
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 cup raisin
- 2 tbsp honey
Start by combing milk rice and salt in a saucepan. Bring it to a boil, then lower the heat and let simmer for about 25 min or until rice i tender stirring occasionally
When the rice is tender, remove from heat and add vanilla extract, cinnamon and sugar
Return to heat and cook until it thicken (about 5 – 10 min)
Remove from heat. Grab about 1/4 cup of raisins
and add them to the saucepan
Stir well
Scoop pudding into serving bowls
Cover with plastic wrap and refrigerate for about 1 hour
When ready to serve, take it out from the fridge and add 1 tbsp of honey
Delicious, sweet, soft rice pudding
