Ok so, at this point I think I need to go and get my eyes checked.
I am serious. I’ve read hundred of pages about aperture, shutter speed, compensation, lightening and I’ve been trying to put into practice what I’ve learned
BUT
let’s face the truth here, my photos aren’t still where I want them to be. They are way far away from where I would like them to be.
I seriously think I’ve got a problem now with focus. I just cannot get it right! Problem is when I look at my camera everything seems on focus, so does on the little screen on the back of my Nikon D60, just until I download them in my mac and dahdah there I see them: blurry, shaky, out of focus pics.
Any advice?

Anyways, moving to food, this morning I made Chocolate Marshmallow Cupcakes. I have just one word: DIVINE! The marshmallow frosting is just incredible!
The ingredients I’m going to list are for about 6-7 cupcakes, so double if you’ve got kids or friends to bake for.
Ingredients (makes 6 cupcakes)
- 30 g unsweetened chocolate
- 1 tbsp unsweetened cocoa powder
- 1/2 cup boiling water
- 1/2 cup + 1 tbsp all purpose flour (75 g)
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup unsalted butter (60 g)
- 1/2 cup sugar (100 g)
- 1 large egg
- 1/2 tsp vanilla extract
- 1/4 cup milk
For the frosting:
- 100 g marshmallow cream
- 1/2 cup unsalted butter (113 g)
- 1/2 tsp vanilla extract
- 1 cup powdered sugar (115 g)
- 2 tbsp heavy cream
Take a nice piece of unsweetened chocolate and chop it up quite small
In a souce pan place chopped chocolate and 1 tbsp cocoa powder
Pour in 1/2 cup of boiling water and whisk until the chocolate melts and all the ingredients are well combined. Set aside
In a bowl whisk flour, baking powder, baking soda and salt
In a bowl of your electric mixer beat butter until smooth and creamy
Gradually add sugar (sorry about the focus folks)
Take one egg and crack it right into the bowl
Keep mixing at low speed scraping down sides from time to time
Next up add vanilla extract and then pour in the melted chocolate
Now add flour mixture and milk in 2 additions
Meaning add some, wait a few seconds so that they get incorporated, then add the other half.
Mix all the ingredients together on low speed until you get a nice smooth batter
Line up 6 muffin cups with paper liners and divide the dough equally
Bake at 180 C (350 F) for about 20-25 min
Meanwhile go ahead and prepare the frosting, the MARSHMALLOW FROSTING!
With your electric mixer on low cream 1/2 cup of butter and 1/2 tsp vanilla extract
Now this is what we need here: Marshmallow cream. YUMMY!
Add about 100 g into the bowl
and mix on low speed until it gets nice and creamy
Still on low speed, add in powdered sugar. Scrape down sides
Now add about 2 tbsp of heavy cream and on high speed beat the cream for 3-5 min or until it gets fluffy and smooth
Now be strong and don’t eat the frosting yet. Don’t even try it cause if you do, you’ll find your head in the bowl licking the sides…Trust me, you don’t want to find yourself there!
Take your cupcakes out of the oven and let’em cool down a bit
Scoop the frosting into a pastry bag and decorate each cupcakes
You can leave it like that of sprinkle the top with some colored sugar grain
