I’m back in Shanghai, the holiday has passed by so fast I didn’t even realized I was about to leave home until I had to pack my stuff and head to the airport.
It is always so hard leaving!
Since I got back I haven’t had time to spend in the kitchen, so I am posting a recipe I made while I was in Italy. It is an easy, tasty mushroom side dish. You can even use it as a dressing for your pasta. DELICIOUS!
It’s simple comfort food, the best!
Ingredients (serves 4):
- 500 g mushrooms
- 1 clove garlic
- 3 tbsp extra virgin olive oil
- 5 ripe tomatoes, peeled and cut into cubes
- salt
- fresh chopped parsley
Wash and cut the mushroom. For this recipe you need this kind of wide, flat mushrooms which I have no idea how they are called in English
In a skillet heat up some oil and saute’ the garlic
until it gets a nice golden brown color
add the peeled and chopped tomatoes and cook them on medium-high heat for about 10 minutes. Add 1/2 tsp of salt
Add in the mushroom, stir around. Adjust with more salt
Cover with a lid and let simmer for about 20 minutes or until the mushrooms are cooked
Turn off the heat and sprinkle fresh chopped parsely
Stir around
Serve warm as a side dish
You could even add some chilly powder and use this sauce for dressing your pasta!
