Pizzi Leccesi

A few days ago I’ve got a comment from Maggie who was asking for more Italian bread recipes. That got me thinking on how many different kind of tasty simple or  stuffed bread Italian cusine has and how few I have posted so far.

Thus the idea of making a typical Lecce bread! PIZZI

Pizzi are small loaves of bread dressed with onions, black olives and tomatoes. They can only be found in the south in the aria called Salento, which is where my little, cute, lovely town is

Let’s bake Pizzi now! Shall we?


  • 100 g all purpose flour
  • 100 g semolina flour
  • 3 tbsp extra virgin olive oil
  • 5 big ripe tomatoes
  • 1/2 cup black olives
  • 1 small onion, chopped
  • 2 tsp instant yeast
  • 1/4 cup water water
  • 2 tsp salt

Heat up some oil in a sauce pan

Add in the onion and cooked at low heat covered with a lid for about 15 mins

Peal and chop up the tomatoes

Add the tomatoes, cook for a few minutes, then add in black olives and salt


In a bowl combine all purpose flour and semolina flour and salt. In lukewarm water dissolve the yeast

with your hand, make a little hole right in the center

add the onion/tomato/olive sauce

and slowly pour in the warm water where you have dissolved the yeast

Using a spoon mix all the ingredients together until you get a very soft and sticky dough

Divide the dough into 3 medium size balls, or 6 small balls…Place them in a nice and warm place and let’ em rest for about 1 hour or until doubled in size

Sprinkle on top some semolina flour then bake’ em at 180 C for about 30 min or until golden brown on top
