I’ve made it safe to ITALIA!
The flight was a long one, and I got stucked in Milan for 2 hours as my flight to Lecce had a delay due to the heavy snow.
It’s cold here but it feels sooo warm. I love being home π
Cooking with mom is a new cathegory I’ve decided to start, where I will collect all the recipes that I am going to make with my mom while I am back home.
Today for lunch we made lasagna with ricotta cheese. We didn’t wanna use any white sauce, to make it a bit lighter, but you can add some if you like. But let me tell you something: even without white sauce this lasagna was delicious!

Ingredients (for about 8 servings):
- 700 g ricotta cheese
- lasagna sheets
- 500 ml tomato sauce
- 1 cup grated parmesan cheese
- 400 g scamorza cheese (0r mozzarella cheese)
We decided to use this kind of fresh lasagna sheets that are sold in Italy and that don’t require to be boiled first, but if you cannot find this, just go with the normal stuff
We also used my mom’s fresh homemade tomato sauce
Look at its texture, totally different from the stuff you buy at the store. Homemake tomato sauce is so much worth it!
In a baking pan spread some tomato sauce
Lay down the first layer of lasagna sheets
sprinkle some parmesan cheese
then go ahead, slice up some ricotta cheese and lay it on top
drop a few more spoons of tomato sauce
next up, slice up some scamorza cheese (or mozzarella)
and add some to your lasagna pan
Reapeat as above for about 4 layers
so go with lasagna sheets and parmesan

At last, cover with an other layer of lasagna sheets and parmesan cheese
add a few more pieces of scamorza cheese and drop some spoons of tomato sauce
and spread it across
then sprinkle more pamesan cheese
you know you want to!
Bake at 180 C for about 30- 40 min or until nice and crispy on top. We left it 5 min more than needed…forgetting things in the oven is a problem I have…and that clearly my mom has too…We are imperfect that way.
Let it rest for a few minutes, then serve!
