ooohhhhhh, it’s Christmas, ok it’s almost Christmas, thing is I am already in Christmas mood and all I can think of now is:
me being home in less than 3 days
me doing Christmas shopping
me wrapping up presents
me unwrapping presents
me cooking lots of Christmas dishes
me eating lots of Christmas dishes
I LOVE Christmas!
And because I’m in Christmas mood today it’s time to share these delightful Christmas cookies, first of a long list of Christmas cookies I am going to share with you!
Ingredients (for about 15 cookies):
- 1-1/4 cup all purpose flour (160 g)
- 1/2 cup unsalted butter (115 g)
- 1 large egg yolk
- 1/2 cup powdered sugar (60 g)
- 1 tsp pure vanilla extract
- 1/2 tsp pure peppermint extract
- 1/4 tsp food coloring
In a bowl place butter
and beat it until creamy
Sift in powdered sugar
and stir well. Add the egg yolk and vanilla and peppermint extract and beat to combine
Add the flour in 2 additions. First add 1/2 cup
beat well
Add the other 1/2+1/4 cup
and beat until you get a very smooth dough
Remove half of the dough from the bowl, cover it in plastic wrap and refrigerate for about 30 min. Add to the other half a few drops of food coloring. Red is the one to use but I realized I only had pink food coloring, so that’s what I have used!
Wrap the other half in plastic paper and refrigerate 30 minutes as well
About 30 minutes later your dough should be nice and firm, ready to be shaped into Candy Cane!
Take a walnut sized piece of red (/pink) and a walnut sized piece of white dough
Roll each color on a lightly floured surface into a 10-12 cm long rope
Place the 2 ropes side by side and gently twist them together
pressing a bit to form a spiral
Shape by bending one end into a hook
let’s get a bit closer
Line cookies on a baking paper about 2 cm apart from each other
Bake at 180 C for about 10 min or until the edges of the cookies start browning.
Remove
Let cookies cool down completely on a wire rack
and enjoy, It’s Christmas!
