Countdown to Christmas: – 2 weeks!
I am excited like a little kid. In less than a week I’ll be home with my family and friends, and fresh air, and Internet freedom, and lots of food, and lots of sunshine, and the beach, and my cute dog and many many other things!
To celebrate the holiday I am going to share with you an other of my most delightful pie recipe: The Creamy Apple Pie. Addictive!
I made it for my bf’s office Thanksgiving reception at 6 am in the morning (on Thanksgiving day)…so this time I cannot be blamed for the low quality pictures…You can’t ask me to cook and shot decently at the same time at 6 am…
After this I will share with you an other divine apple pie: the Sour Cream-Apple Pie…Oh my goodness I can’t wait!
Let’s bake baby!
Ingredients:
For the filling:
- 2 granny smith apples
- 1/2 cup brown sugar (110 g)
- 1/2 cup white sugar (100 g)
- 1 tbsp flour
- 1 cup heavy cream (240 ml)
- 1/3 tsp cinnamon
- 2 tsp vanilla extract
For the topping:
- 1/2 cup butter (115 g)
- 3/4 cup flour (95 g)
- 1/2 cup brown sugar (110 g)
- 1/4 cup of chopped pecans (150 g)
Take 2 granny smith apples, remove skin, slice them up and throw them in a bowl
In a separate bowl combine white and brown sugar
Add vanilla, cinnamon, and flour
Pour in the heavy cream and whisk all the ingredients together
Next up, pour the cream over apples
coat well, set aside. Give them time to deeply fall in love with each other.
It’s time to prepare the topping! HURRA!
Take some pecans and well, as usual, put them in a food processor and process until finally ground. However, as I’ve said before, I don’t own a food processor
David, did you read that? I don’t have a food processor…
Sorry, was trying to pass that information to my bf who seems to ignore my cooking needs and leaves me with inadequate kitchen tools

back to the pecans, what was I saying? Oh right, that I need a food processor and a kitchenAid…
wasn’t that?
oh yeah, that since I dont have a food processor to ground my pecans I just put them in a zip lock bag, well sealed and a hammer them with a hammer…It’s fan if you manage to keep your fingers away from the hammer…which I haven’t sometimes…but that’s an other story for an other time…
In a bowl combine pecans with sugar, flour and butter and mix all the ingredients together with a fork until the mixture forms large crumbs
Take your pie crust (as always see my Pie Crust Recipe)
Pour the apple creamy mixture onto the pie shell
then cover with the topping
Wrap foil around the edges, so they won’t burn while cooking
Then cover the top with foil and bake at 180C for about 1 hour. After about 45 min, remove foil and keep cooking
I couldn’t cut it to show you the inside, since my bf had to bring it to his office, but I garantee you it has a soft creamy heart that will make you fall in love with this pie
