I’ve bought quite some packages of ricotta Cheese at Bottega last week so now I am going to experiment a bit with it!
There are a lot of different recipes you can do using ricotta: pasta sauce, pancakes, pies, cheesecakes, muffins, bread and focaccias. But this recipe is quite unique as ricotta is the main and pretty much only ingredient of this dessert.
I’ve used blueberries but you can substitute that with a bunch of other things like chocolate chips or strawberries, for example.
Give this a try!
Ingredients (for 3 servings):
- 250 g ricotta cheese
- 1 small egg
- 3 tbsp sugar (heaping)
- 1/4 cup Blueberries
- 1 tbsp butter (to butter)
- 1 tbsp flour (to flour)
- powdered sugar and syrup (optional)
Take ricotta cheese out of the refrigerator
and place it in a bowl mashing it up a bit
Add egg and sugar
Mix until you get a very creamy mixture
Next up, add blueberries
Slightly butter small aluminum forms (like the one you use for Muffins)
then flour them a bit
Fill’ em up with the ricotta butter
Bake for 40 min at 180 C
Let cool down the sprinkle on top some powdered sugar
You can also add blueberry syrup or chocolate syrup if you have used chocolate chips
