Let’s cheer up with Tofu!

This is the best tofu I have ever had! I learned it from my bf’s mom (she is from Taiwan) who makes it for us every time she comes visiting or every time we go to San Francisco.

It is kinda of an Asian comfort food. It’s easy, fast and doesn’t really require any strange or hard to find ingredient.

This, together with dumplings, is my favorite Chinese food!

Ingredients (for 3 servings):

  • 1 block tofu
  • 1 egg
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp corn starch
  • 1/4 cup water
  • 3 tbsp peanut oil
  • 1 cup rice
  • 2 tbsp green onion, chopped

Take one block of tofu – you can buy it at any wet market in Shanghai (or anywhere in China)

Start by cutting the tofu into 1 inch cubes

In a skillet heat 3 tbsp of peanut oil, add tofu and salt

Flip to the other side, add more salt and keep cooking at medium heat until golden brown

add 2 tbsp of cornstarch in a bowl

Add 1/4 cup of cold water

and using your hands mix it up untill cornstarch dissolves…I know I have weird looking hands…whatever!

Add 1 tbsp of say sauce and 1 tsp of sesame oil and stir

Add the cornstarch to the tofu, stir gently, cover with a lid and let cook at low-medium heat for a few seconds

In a separate bowl crack one egg

and beat it gently with a pinch of salt

Add it to the tofu, stir gently but quickly cause the egg is going to cook really fast and you want it to be evenly distribute on the tofu

Turn off the heat, add chopped green onion

and mix all the ingredients together, very gently

Serve on a warm bed of rice

and enjoy

I love this tofu, try it tonight for dinner, you’ll love it too 🙂
