I have a secret to share with you today…but, hey…shh you gotta promise you won’t tell anyone, it has to be within you and me…no one else.
well…I like corn…I said it!
And if now you don’t wanna be friends with me anymore I’ll understand……
Since I LOVE CORN, I always try to incorporate it in as many dish I can: salads, meat, pasta and yesterday I even added it into my “Mexican dip”…it was divine!
I highly recommend you all to try this!
Here is how you make it!
- 1 ear of corn
- 1 big tomato
- 1 avocado
- 1/2 purple onion
- 1/2 lemon juice
- 1 tsp salt
Take corn, wrap it in foil and bake it at 180 C for about 1 hour, this way it will cook without drying
Let the corn cool down, remove the external leaves
then with a very sharp knife, begin slicing downward, cutting off the kernels
Next up, chop the onion
Next, chop the tomato
Chop up some fresh parsley
Place all the ingredients in a big bowl
and dress with lemon juice and salt, toss and serve with chips 🙂
Oh, I forgot to tell you ……. I turned 18 yesterday 🙂
