This is my family recipe for ossobuco!
Ossobuco is basically veal shank…a delicious, tender meat. It is cut pretty thick so it takes one to two hours to cook, but it is totally worth it.
My family recipe is really easy. The lemon zest you will add at the end will help lighten the heaviness of the meat and give a wonderful flavor to the dish.
This is how you make it. Give it a try sometime soon 🙂
Ingredients (serve 4):
- 4 pieces Ossobuco
- ½ cups Flour
- 50 grams Butter
- 1 cup White Wine
- 4 Tablespoons Tomato Sauce
- 1 clove Garlic, Minced
- 1 whole Lemon Zest
- 2 Tablespoons Chopped Fresh Parsley
- 2 teaspoons Salt
- 2 teaspoons Ground Black Pepper
Take your ossobuco meat and lay it down on you counter
Generously salt and pepper the ossobuco. It’s a thick piece of meat so don’t be afraid and season it well
then dredge each piece in flour
In a skillet, melt butter
brown ossobuco on both sides
Pour in the wine, turn on to high heat and let evaporate
Add tomato sauce, adjust seasoning with salt, turn to low heat, cover with a lid and let simmer for about 1 to 1 and a half hour (more if necessary)
In a bowl combine minced garlic, lemon zest and chopped persley
When the ossobuco is almost ready, add the garlic/zest/parsley mix to the meat and keep cooking for 10 more minute.
Turn off the heat
and serve
