There is nothing more delicious than comfort food. I’m stating this here and I am ready to confirm it anywhere! Specially recently comfort food is what I need. I’ve been really busy at work trying to get a promotion and a raise, with all the frustration and fatigue that comes with it; I’m setting up my little translation agency for language and business services (you can already check out the website, even if it’s still “under construction” www.bellababele.com); I’ve been really worried over my mom who is having some health problems that I hope we’ll manage to solve soon, and a bunch of other things have made of these last weeks a really, really stressful period for me! Thus coming back home, make and taste some comfort food made me feel better. It really did! It’s like drinking a cup of chicken soup when you have a cold!…
…alright, let’s make this chicken with potatoes!
Ingredients (for 4 servings):
- 1 kg of chicken (tights, breast, wings, whatever you like)
- 2 big potatoes
- 1-1/2 cups of chicken broth
- 1 cup of dry white wine
- salt, black pepper, theme and rosemary
- 3 tbsp extra virgin olive oil
- 2 cloves garlic
Cut the chicken into pieces and take off the skin (you can leave it if you are in that kind of things, I personally prefer my chicken without its skin off…)
Take the potatoes, peal off the skin and cut’ em into small cubes
In a pan heat oil, garlic and chicken. Add salt, herbs and black pepper
cook on both sides
Pour in 1 cup of white wine, turn on the heat and let it evaporate
Now, add the potatoes, adjust with salt (if necessary)
and add in the chicken broth
Cover with a lid and let simmer for about 30 min, or until it’s all well cooked
at this point take off the lid and let all the remaining liquid evaporate. Your chicken with potatoes is ready!
