I went to the Chinese wet market the other day and I saw pumpkins, and I suddenly wanted to eat pumpkins and since last weekend was Halloween, I felt like I should have made a pumpkin based recipe, so I did!
I made pumpkin gnocchi! It was fun π
Ingredients (for 4 servings):
- 350 g pumpkin (just the pulp)
- 350 g potatoes
- 1 whole egg
- 1 tsp cinnamon
- 1 tsp salt
- 1 – 1/2 cups flour (to start with, more if needed)
- black pepper
- to dress: butter and sage
Take your nice pumpkin
Remove it’s center, cut it into slices , put’ em on a baking tray
Bake at 180 C for about 25 min (or till cooked)
Set aside and let cool
Take some potatoes and cut’ em into pieces
Boil’ em till soft, remove from water and let cool
In a large bowl combine pumpkin pulp andΒ potatoes (no skin pls).
Mash with a fork till they get creamy
Add salt
cinnamon and black pepper
Incorporate 1 whole egg and the 1-1/2 cups of flour
Start mixing all the ingredients together. Add more flour if necessary
mix and kneat the dough until it gets smooth and soft
Slightly flour the surface where you will be placing your gnocchi
Cut the dough into pieces shaped like a thick finger
Cut each finger into smaller pieces….pretty much as big as 1/3 of your forefinger
Take each piece and rub it against a grater, this will get it to actually look like gnocchi π
Remember: always sprinkle flour on the dough while you are working with it to avoid it to stick on your counter or on your garter.
Drop your cute gnocchi into salty boiling water and cook until they come up to the surface. When they do so it means they are ready!
Now you can dress’ em as you like, I just took some butter, melt it up in a pan
Add some salt and sage (I used the dry one as I didn’t have any fresh sage leaves at home…it worked just fine!)
then I’ve poured the butter/sage mixture all over my gnocchi
I’ve mixed all up and that was it!
Sprinkle some Parmesan cheese before serving, it will make your skirt fly up π
