Chinese Fried Rice

Fried Rice is one of those dishes people make in China to get rid of left over of steamed rice, if they want something quick to eat or if they cannot afford to spend money on more expensive ingredients.

What I like about fried rice is that you can basically tailor made it including those ingredients you like the most and leaving out what doesn’t please your taste.

You can make a vegetarian fried rice with eggs, end veggies, a seafood fried rice, a chicken fried rice or with any other kind of meat and spices.

The recipe I am posting today is a really simple one. I made it last Sunday for lunch, I was home with my bf and outside it was raining so we really had no desire to leave our apartment. All I had in the fridge was carrots, green onion, eggs, ground beef and some left over of steamed rice, so I thought to do like Chinese people do in situations like this and make fried rice!

I am glad I did cause fried rice is really simple but also very tasty!

This is what you need – in brackets I am going to list also other ingredients you can incorporate whether you have them at home.

Ingredients (for servings):

  • 2 cups steamed rice
  • 2 big whole eggs
  • 1/2 carrot (+ mushrooms, green peas,…)
  • 150 g ground beef (or chicken cut into small pieces, or pork, or just completely omit the meat if you are not in that kind of things)
  • green onion
  • 2 tsp salt
  • 1 tsp weijing – MSG (monosodium glutamate)
  • 2 tsp minced ginger
  • 2 cloves of garlic
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 3 tbsp peanut oil

In a bowl mix ground beef with chopped green onion, minced garlic and ginger, 1 tbsp soy sauce and 1 tsp sesame oil. Let marinate for about 10-15 min.

Wash and chop the carrot in very small pieces (if you are using other vegetables, like mushrooms, do the same – for the green peas, give’ em a fast boil to make them tender).

Slightly beat 2 eggs with a pinch of salt

In a skillet (better if you have a wok…I used to have one but I believe my bf’s mom threw it away during her last visit…) heat 1 tbsp of oil. When it is really hot throw in 1 tsp of green onion and one minced garlic

Then add the eggs and scramble’ em. When they’re half way to be ready, remove from heat and set ’em aside.

In the same skillet (wok) – without washing it – saute’ the meat, then set aside

Now add 2 tbsp of oil and heat it really hot. Throw in the chopped carrots (and the other vegetables you have decided to use), and saute’ at high heat

Add 1 tsp of soy sauce, one of sesame oil and

1 tsp of  weijing, which is basically this,also called MSG

Mix everything together

now add the rice, 1 tbsp soy sauce and 1 tsp of sesame oil, saute’ till all the grains are separated, add the meat

and then the scrambled eggs

Mix all the ingredients together and serve immediately!

You can eat it like that or serve it as side dish to meat.
