What’s better than waking up and having coffee and muffins for breakfast? Is there a better way to start the day? Because if there is, please people out there come and tell me! Show me!…anyone?…ok, then my Coffee and Muffin good morning is still the best π
I am sure than once you’ll try this recipe you’ll agree with me.
Let’s get started
Ingredients (for 6 muffins and some other treats):
- 150 g all purpose flour
- 80 g sugar (half white, half brown)
- 50 ml strong coffee
- 1 tsp cinnamon
- 50 g butter (unsalted)
- 1 egg
- 70 ml milk
- 1 tsp baking powder
- coffee grain to garnish
Start by measuring 80 g of sugar (40 g brown, 40 g white)
In a bowl combine flour, sugar, cinnamon and baking powder.
Melt the butter
then pour in milk,
lightly beaten egg
and coffee (I’ve used the Crema coffee from Castellari caffe’...because it is just the best!).
now pour the wet ingredients into the dry one.
Stir gently to combine. You will get a very pourable mixture, which is exactly how you want it to be.
Pourable mixture = Extra Moist muffins!
Lightly butter 6 muffins cup and fill’ em up for 2/3 with your coffee butter.
Grab some coffee grains
and gently place a few on top of each muffin
Bake at 180 C for about 20 min.
And here they are!
Now, since I like my food really sweet, this is what I’ve done!
I’ve pour some honey on top of my muffin
and at the first bite I died and came back to life!

Since I had some butter left, I’ve pour it into small forms,
bake’ em for about 10 min at 180 C
Add some whip cream on top
And I enjoyed this treat with my afternoon tee.
