Comfort food is the best! It really is. It’s easy, tasty, delicious!!! And it makes me feel at home…or a bit closer at least…
This meatloaf recipe is not Italian. It is what I consider an American version of the Italian Polpettone, but I do think it is really, REALLY tasty.
This is how you make it folks!
Ingredients:
for the meat
- 500 g ground beef
- 2 eggs
- chopped parsley
- salt and pepper
- 3 slices of white bread
- 1/4 cup Parmesan cheese
- 4 slices of bacon
for the sauce
- 1/4 cup ketchup
- 2 tbsp mustard
- 2 tbsp brown sugar
- Tabasco
Soak the bread in a bowl with water (or milk). Once it’s soft squeeze out the liquid.
In a separate bowl combine the ground beef, bread, eggs, salt, black pepper, chopped parsley and Parmesan cheese.
Using you hands mix all the ingredients together and shape the obtained mixture into a loaf.
Place your meatloaf on a baking tray covered with baking sheet.
Cover the meatloaf with slices of bacon.
Now prepare the sauce by mixing ketchup, mustard, brown sugar and some Tabasco in a bowl.
Spread 1/3 of the sauce on top of the meat loaf.
Bake for 45 min at 190 C. Then take the meat out of the oven, spread an other 1/3 of the sauce and keep baking for other 15-20 min.
Now your meatloaf is ready!
Slice it up and serve with the remaining sauce.
NOTE: make sure the meat inside is not red. You want it to be well cooked.
