Simple-Fast Burritos

I like Mexican food.  I like the tortillas, the cheese, the spicy meat, the beans and cilantro,  and salsa, and guacamole…oh I LOVE guacamole…but no, I do not like the green chillies, they just make me sick! My lips swallow up, my eyes get all red and wanna pop out my face and I cry…and you know, I hate crying!

I DON”T WANNA CRY!

So my burritos don’t have any chillies and I’m happy like this. I like simple things! Simple is the best folks!

Ingredients:

  • 4 flour tortillas
  • 1 can re-fried beans
  • Guacamole
  • Pico de Gallo
  • Sour Cream
  • 300 g Ground beef
  • 1 tsp cumin
  • 2 tsp oregano
  • salt, fresh cilantro
  • enchilada sauce
  • 200 g Cheddar Cheese
  • 1/2 onion,  1 clove garlic

Chop the onion and mince the garlic. In a skillet heat some oil and saute ground beef, onion, garlic and salt.

Add cumin and oregano and 3-4 tbsp enchilada sauce.

Grate some cheddar cheese

Heat up the re-fried beans

Pour in half of the cheese. Mix well

Take your flour tortillas and nuke’ em for a min in your microwave.

On each tortillas spread 1 tbsp re -fried beans

Ground meet,guacamole, sour cream

pico de gallo and chopped cilantro.

Fold your tortillas to make a burritos.

Place your burritos on a plate and on top sprinkle the remaining cheddar cheese.

Nuke in your microwave for 1 minute

Pour in some enchilada sauce

and chopped cilantro and

Eat, my friends, EAT!
