This is one of my favorite Summer salad. When I lived in Italy in the Summer my mom used to make it very often and it was THE MOST delicious food to eat when we got back from the beach, hungry and thirsty. I remember I use to eat it out of the serving bowl, standing in front of the fridge…it was awesome!
You should try, it’s an experience! A lovely, unforgettable one…
Ingredients (for 6 servings)
- 1 1/2 cup white rice
- 250 g plum tomatoes
- 1/2 jar of ‘condiriso’
- 1 can (180 g) tuna in oil
- Basil or arugula
- 100 g mozzarella cheese
- 1/4 cup olive oil
- salt
- 1 lemon
- 1/2 cup artichokes in olive oil
Cook the rice and let it cool down
Dress it with 2 tbsp extra virgin olive oil, the zest of 1 lemon and the juice of almost 1/2 lemon.
Grab the tomatoes
Cut them in half
and then dice them up
Next up, grab some artichokes in olive oil, these are homemade
and cut them into halves
dice up the mozzarella cheese
then take the tuna
and the condiriso
and add all the ingredients to a big bowl, together with some fresh and crispy arugula (or basil if you prefer)
Dress with salt and 2 more tbsp of extra virgin olive oil, stir so all the ingredients are well coated
Add the rice too and mix well
Cover your rice salad with plastic wrap and refrigerate for at least 2 hours or even over night.
Enjoy nice and chill!
