It HOT! It’s so hot here. So horribly, oppressively, humid hot. It’s so hot that I was all set to make a warm recipe yesterday afternoon but the thought of ingesting anything with a temperature higher than 20 degrees made me wanna cry so I opted for this easy and refreshing ice cream sandwich recipe…because I love Ice Cream and because I love ya!
Ingredients (for about 5-6 sandwiches):
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup flour
- 1/4 cup cocoa powder
- 1 tsp vanilla extract
- 1 egg
- 2 cups vanilla ice cream
Place the butter in a bowl and microwave it for 30 sec till it melts
Pour the melted butter in a bowl with sugar.
Add the egg and whisk well. Slowly sift in flour
Add the vanilla extract and mix well
Sift in the cocoa powder
Pour the batter on a 25 x 35 cm baking tray covered with baking sheet.
Lick the whip!
Now spread the batter evenly with a spatula or a spoon (if you, like me, can’t find your spatula…maybe my bf took it for doing some gardening because that’s what he does, use every single thing he finds on his way for playing with his flowers and plants)
Bake for 10-12 min at 180 C.
Remove from the over and place on a wire rack to cool down
Cut the cake in a half
Turn one half of the cake top side down
Spread on top the softened ice cream…yummy
Cover with the second half place top side up.
Wrap in plastic wrap and put into the freezer for about 2 hours.
Take the cake out of the freezer and cut it into rectangles. Serve immediately or wrap each sandwich in plastic wrap and place back into the freezer.
Now go seat on the couch, with your ac set at 22 C and enjoy your ice cream sandwich 🙂
