Creamy Carrot Soup

I love carrots, they are among my favorite vegetables and they have a lot of benefits for our health, in fact they are reach in Vitamin A and

1. are energizing and antiseptic

2. Eating carrots will encourage healthy skin, hair, bones, eyesight and will also cleanse the body

3. It is believed that carrot may reduce risk of heart disease and certain types of cancer

For these and a lot more other reasons you have to make this soup today. It’s creamy texture will make you fall in love with it!

Ingredients (for 6 servings):

  • 8 big carrots
  • 1 and 1/2 cup vegetable broth
  • 1 clove garlic
  • 1/2 tsp nutmeg
  • 1 and 1/2 cup half and half (or plain yogurt)
  • salt, black pepper and basil
  • 1 lemon zest

Take 8 carrots, wash’ em, peel’ em and cut’ em into smaller pieces

Minced the garlic

Place carrots, garlic, lemon zest and vegetable broth in a pot

Cover with a lid and let simmer for about 20-30 min, or until carrots are soft.

Now the carrots are tender

Turn off the heat and with an immersion blender cream the carrots.

Add salt, black pepper and nutmeg…adjust as you like

Now add the half and half (or yogurt if your watching your weight) and let simmer for a few minutes.

Chop some fresh basil and serve your soup in a bowl with a sprinkle of basil on top!
