My way of making Cordon Bleu

On line there are lots of different recipes for making cordon blue, most of them call for chicken breast cut into thin slices…I’ve tried a bunch of different ways and after years…(yes you heard me) of trying and trying I’ve decided that this is the best recipe for making cordon blue!

You can either fry them in a pan or, lighter option, bake them in the oven (which is how I like’ em), either way they are delicious. Serve them with fresh salad!

Ingredients (for 5 servings):

  • 500 g ground chicken
  • 5 slices of ham
  • 5 slices of cheese
  • 1 tbsp flour
  • 1/2 cup breadcrumb
  • 1 tsp salt
  • 1 egg


  • 1 egg
  • 1 cup breadcrumb
  • 1 tbsp olive oil

In a bowl combine chicken, one egg, flour, salt and 1/2 cup breadcrumb

Mix till you get a firm mixture.

Divide the mixture into 2 parts.

Take one part and makes 5 disc about 5 mm thick

On top of each disc place one slice of ham and one of cheese

With the other half, make other 5 discs and cover to previous one.

Cover your oven tray with baking sheet and lightly oil it.

Beat one egg with a pinch of salt. Pass each disc in the egg then in the breadcrumb and place it on the over tray.

Gently brush each cordon blue with olive oil.

And here we go, ready to bake or fry’ em!

Bake at 200 C for 30 min.

Serve with salad!
