It’s hot, it’s HOT………! I can barely keep my cloth on with this heat. When the Summer kicks in, like it has done in the last weeks, I feel the need to eat something refreshing and light! Also, since only thinking about walking from the subway to the supermarket makes me sweat, I need to make dinner with what I have at home, which yesterday was: frozen chicken breast, homemade pesto, potatoes, carrots and tomatoes, which isn’t much but it’s definitely enough for making something tasty!
Trust me, this salad is badass! You will love it, your husband will, your friends will as well and they will love you too 🙂
Ingredients (for 6 servings):
- 400 g chicken breast
- 2 small potatoes (or one big)
- 1 carrot
- 200 g cherry tomatoes
- 1/2 cup pesto
- salt, pepper, basil leaves
Wash, peel and cut carrots and potatoes into thin stripes.
Bring a pot of water to a boil and boil vegetables for one min. Dry and let cool down.
Slice the chicken breast
and grill it
Then cut it into stripes.
In a bowl place the boiled vegetables, washed and cut cherry tomatoes and the chicken breats.
Take your homemade pesto…doesn’t it smell delicious?
and dress your salad with salt, black pepper and your delicious pesto. Mix well and refrigerate for at least 1 hour before serving. Decorate with some fresh basil!
