The single woman dinner

This is pretty much what is going on in my kitchen now that I am alone: quick and simple recipes that don’t require to use more than one pan and one plate!

The funny thing of living alone is that you can do whatever you want without having anyone find it out. So yesterday night I got home around 8.30 pm after a busy day at work and my yoga class and I was just too tired and lazy to only think about something original , so still wearing my yoga pants and with my greasy hair tied  in a knot on top of your head, I made myself  some simple asparagus with eggs. Though I have found out that sometimes simple is the best, in fact last night dinner was quite tasty!

You single women and men should all try this recipe!

Ingredients (for one person, of course):

  • 2 eggs
  • 5 long asparagus
  • salt, mint, olive oil.

Wash and cut your asparagus as long as they need to be to fit in the pan you have decided to use.

Boil them for about 5 min or until tender…….You can use this time to water the plants on your balcony, like I did, but if you decide to do so, dont forget to spray on your legs some mosquitoes repellent…….I got like 10 bites  in less than 5 min…

Place the asparagus on a plate and drain the water from the pan.

In the same pan, drop 1 tbsp of olive oil, heat it up

Add the asparagus with some salt

Now open on top of the asparagus 2 eggs

Add salt and some mint

Cover with a lid and let cook for about 5 min…Your dinner is ready! You can remove the eggs and asparagus and put them in a plate or…..even eat them straight from the pan…No one is going to see you 😉
