This is my grandma recipe for the meat polpettone.
Polpettone is like a big, huge, meat ball filled with cheese, ham and hard boiled eggs. It can be baked in the oven or cooked with olive oil and white wine in a skillet. Either way it is delicious!
I made it last night for dinner and we literally polish off our plates! You guys should definitely give it a try!
Ingredients (for 4 servings…or if you eat like us…3 servings):
- 500 g ground beef
- 5 slices of bread
- 1 egg
- 40 g parmesan cheese
- salt, freshed chopped parcely
- 2 eggs
- 3 slices of ham
- 40 g of cheese (scamorza or cheddar)
Hard boil 2 eggs, then peal them and let cool
In a bowl combine ground beef, salt, egg, bread (first soaked in water and squeezed), chopped parcely and Parmesan cheese.
Spread the meat on a baking sheet
Lengthwise place ham, cheese and the hard boiled eggs.
Close the meat and shape it like a long roll.
In a skillet heat some olive oil and brown the meat from all sides.
Pour in some white wine, add 1/2 cup of water (125 ml), cover with a lid and let simmer for about 30- 40 min (turn the meat on the other side after 20 min).
Turn off the heat and let it cool a bit, then serve with its cooking oil.
One serving provides:
