This potato salad recipe is typical from the South of Italy, in fact it is a common dish to find in any Italian family during the Summer.
As the Summer in Shanghai is not less hot than it is in Puglia, when the temperature starts going up I feel the urge for cool dishes, first cause I cannot stand staying for too long next to the stove or a hot oven, and second because I really feel the need for something refreshing and light.
This is the vegetarian version of this salad but you can add some tuna and have a complete meal with all the nutrients we need.
Ingredients (for 5 servings):
- 3 big potatoes
- 2 big tomatoes
- 2 tbsp capers
- 1 can of tuna (optional)
- olive oil, salt and oregano
Wash the potatoes, boil them (it is ready when you can stick a fork in it), peal them and cut them into cubes. Wash the tomatoes and cut them into pieces. Add the tomatoes to the potatoes and capers
Dress your salad with oregano, olive oil and salt (and tuna if you want).
Put in the fridge for about 1h and serve cold.
