The Shortbread Cookies

I have such a love-hate relationship with cookies. I Love them for the way good cookies melt in your mouth, I Hate them cause when I eat them my butt goes one size up, I Love them because making cookies is such a lovely experience and you can get to pick their shape. I Hate them because of what they do to my butt…

Anyways, last night I made this delicious shortbread cookies. You might think I have been making too many sweets recently….emmm…some people say when you crave sweets is a sign of deficiency of love………mmm, wait, now that you are making me think about it that could be true, I haven’t seen my bf in the last 4 weeks and my family and closest friends live 5.000 miles away from me…Sniff, sniff…That’s soooooo SAD!

Yeah, you see, that’s why I rather eat cookies than get depressed thinking about all this!

…mmmmm, but then my butt would get like a balloon…would that be more depressing?….uh, whatever…

Let’s move to the cookie recipe…

Ingredients (for about 20 double cookies):

  • 1 cup all purpose flour (130 g)
  • 1/2 cup butter (113 g)
  • 1/4 cup powdered sugar (30 g)
  • 1 tsp vanilla extract
  • 80 g semi sweet chocolate chips

Beat the butter until smooth and creamy (better use and electric mixer if you have one…it’s not an easy job by hand)

Add the powdered sugar and beat until smooth (about 2 min)

Gently stir in the flour and mix until incorporated.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour (more if needed).

On a slightly floured surface roll out the dough into a 1/4 inch (0.6 cm) thick circle  and using a cookie cutter cut it round or other shapes.

Place on baking sheet and refrigerate for other 15 min.

Meanwhile preheat oven at 180 C. Bake your cookies for about 10 min.

Let them cool down on a wire rack.

Put the chocolate chips in our microwave and….

…well, microwave it till melted (40 sec)

Take one cookie and spread on it some chocolate then close with another cookie.

Refrigerate for about 20 min or until the chocolate has hardened.

Now please make yourself a cup of hot chocolate, go sit on your couch and enjoy this delight!
