Artichoke Frittata

This time I not writing from China but from ITALY, yeahhh! I got here last Saturday as a surprise to my mom for her birthday and now I am enjoying sunshine and great food.

Since I’m here I have decided to show you some recipes that, unfortunately, we cannot make in China because of lack of proper ingredients, but that you can recreate next time you get the change to go back home on vacation.

This recipe is a frittata cooked in the oven, so it is not fried, therefore light and healthy. It is made with artichokes which I haven’t found in Shanghai, but that I used to buy in Beijing at Jenny Lu so if you guys cannot find any, maybe you can try replace them with some asparagus.

Ingredients (for 8 servings):

  • 5 artichoke
  • 3 eggs
  • 50 g grated parmesan cheese
  • Breadcrumb (about 120 g)
  • Parsley and salt

Eliminate the external leaves from your artichokes and cut them into smallish pieces. Put them in a bowl with water and the juice of half a lemon.

In an other bowl beat the eggs with a pitch of salt.

Soak the breadcrumb in water, once soft squeeze it and break it into small pieces into the eggs.

Add the Parmesan cheese and parsley.

Now the artichokes.

Grease a pan and pour in the mixture.

Bake at 180 C for about 30-40 min.
