Tagliolini is a type of Italian pasta typically from Emilia-Romagna (a region in the center of Italy). It is long and cylindrical in shape. You can buy it pre-made or you can make it yourself, like I have done.
After the homemade tagliatelle and ravioli here we go with an other home made pasta cut and with an other delicious dressing made with smoked salmon, heavy cream and some vodka.
This is really a great dish to serve when you have over guess that you want to impress, trust me they will love it and will love you by proxy 🙂
Ingredients (for 3 servings):
- 120 g Smoked salmon
- 200 ml heavy cream
- 1 tbsp butter
- 1 1/2 cup semolina flour
- 2 eggs
- 25 ml Vodka
- Salt, pepper, grated Parmesan cheese
First of all, let’s start making the dough for the pasta!
Place the flour in a mound creating a well in the center where you will add salt and pour in the slightly beaten eggs.
Slowly pull the flour into the eggs until is all incorporated. Knead the dough by hand adding more flour on the surface. Let the dough rest for about 30 min.
Take a little piece of dough and start pressing it using your pasta machine at no.1
Keep pressing the dough making it thinner each time by moving to no 2. Now insert the dough into the tagliolini/spaghetti section and start rolling out your tagliolini
Place them on a tray covered with flour so they wont stick to each other
Let’s now prepare the sauce. Cut the smoked salmon into pig pieces
In a skillet heat some butter and sautee the salmon
Pour in the vodka and on high heat let it evaporate.
Add now the heavy cream, some salt (not too much cause the salmon is already pretty salty), and some fresh black pepper.
Let simmer for about 5-8 min.
In the meantime boil and drain your tagliolini (remember to add a couple of spoons of oil in the water so they wont stick together.
Dress your tagliolini with the salmon sauce and same parmesan cheese. Enjoy!
