Wrapped Costolette (pork chop)

Last week Michele, the editor of vivishanghai came over for dinner to interview me about my blog and cooking class. For the occasion I prepared these delicious pork chops. I’ve learned this dish from my mom, who make it very often for dinners with her friends. I find it delicious! It also have an impressive look which will leave your guest breathless 😉

For good and inexpensive pork chops, just got to Carrefour, where they are sold at 18.60 yuan per half kilo. For the mushrooms get the white kind, you can find them everywhere, Carrefour or Chinese wet market, or even City Shop (but there it will be more expensive). For the speck, I bought it at Carrefour as well, one package costs 22 kuai.

You can substitute the pork with beef chop and the speck with some Italian prosciutto

Ingredients (for 4 servings):

  • 8 pork chops
  • 4 slides of speck
  • 500 g mushroom
  • 3 tbsp olive oil
  • butter, salt, parcely, flour
  • 1 clove of garlic

Wash and cut the mushrooms. In a pan heat the oil and sauté the garlic, then add the mushrooms and a pinch of salt. Cover with a lid and let cook at low fire for about 15 min. When the mushrooms are cooked turn off the heat and add some freshly chopped parsley

Dust the pork chop with some flour

In a pan heat some butter and sauté the pork chop on one side

Then sauté from the other side, while you are doing so add some salt on both sides

Now it’s time to wrap them up! 😉 Take a piece of cooking paper, place one pork chop on it. On top of the pork chop lay half slide of speck

Add a couple of spoons of mushrooms

Now wrap it up in the cooking paper and place it on a baking tray

Bake at 180 C for about 20- 25 min

Serve hot with some baked potatoes

  • Carbohydrates: 8.8 g
  • Protein: 40 g
