Dani's Creamberry Crostata

A crostata is an Italian baked dessert tart, and a form of pie. It is traditionally prepared by folding the edges of the dough over the top of the jam/marmalade filling,

There are a hundred different ways to prepare it, generally each family has its own personal recipe with more or less eggs, with more or less butter with shortening instead of butter,  also there is who before using the dough place it in the fridge for about 30 min. Mine is a time saving and lighter version, I like it this way and I think it comes out pretty good.

You can freely choose what kind of filling you want: just jam, jam and cream, just cream, nutella, fuits……I’ll post more crostata related recipes but for today enjoy this delicious Cream-berry one!

Ingredients (for about 12 servings): 配料(约12人份量)

  • 200 g flour (1 1/2 cup) –  200克面粉
  • 110 g sugar (1/2 cup) –  110 克白糖
  • 1 egg and 1 yolk – 1个鸡蛋和1和蛋黄
  • 65 g butter (1/4  cup) – 65克黄油
  • 1 tsp baking powder – 1茶匙发面苏打
  • 200 g Blueberry  Jam – 200克兰梅酱
  • 200 g Pastry cream – 200克奶黄

Place the flour in a mound creating a well in the center where you will add sugar, baking powder, butter (cut into cubes) and eggs. 将面粉筛在台面上,在中央拨出一个洞,放入白糖,发面苏打,黄油(切块)和 鸡蛋。

Slowly pull the flour into the eggs until is all incorporated. Knead the dough  till smooth. 然后搅拌搓匀。将面团搓揉均匀至光滑、柔软有弹性。

Grease a spring form pan and sprinkle some flour.将油涂在带有弹簧扣的烤盘锅上然后将面粉滴上面。

Divide the dough into 2 pieces, one big and one small. Roll out the big one and place it in the pan. 把面团分成2团,一团大的一团很小的。把大的一团成一长块, 然后把它放在烤盘里

Pour in the pastry cream 倒入奶黄

Then add the blueberry jam and fold the edges of the dough. 再把蓝莓酱放入,然后将面团的边缘往里面折叠。

Bake it in preheat oven at 180 C for about 30 min, then decorate it with the remaining dough. 烘培180度,烤30分钟。然后用 剩余的面团(小的一团)装饰派

Keep baking for other 15 min. 再烤15分钟。
