The Spinach and Ricotta Crepe Rolls is a very famous and popular dish in Italy. It is very convenient since it can be prepared in advanced and just baked last minute. It has a very delicate taste and a soft texture.
I’ve made this dish several times here in Shanghai and it has always been appreciated by all my guests.

Ingredients (for 12 rolls): 配料（约12 个卷）：
- 12 crepes – 12 张可丽饼
- 200 g ricotta – 200 克ricotta 酪
- 300 g fresh spinach – 300 克新鲜菠菜
- 1 egg – 1 个鸡蛋
- 250 ml bechamel sauce – 250 升bechamel 酱
- 20 g butter – 20 克黄油
- 1/2 cup parmesan cheese – 45 克磨碎帕尔马干酪
- salt – 食用盐
Wash and boil the spinach. 首先把菠菜洗干净煮熟。
Squeeze out the water and cut them into smaller pieces， then add the butter. 将水控干,把菠菜切小块。
Add the ricotta cheese, butter, 2 tbsp parmesan cheese, salt and 1 egg. Mix all the ingredients together. 加入ricotta酪，2勺磨碎帕尔马干酪，食用盐鸡蛋。把所有的材料均匀搅拌一起。
In an over tray drop 1- 2 tbsp of bechamel sauce. 一正方烤盤中底先加一點bechamel酱.
Pour one tbsp of the spinach and ricotta mixture on each crepe and roll it up. 每一张可丽饼上下落大约1把大汤匙菠菜和ricotta混合物。 将可丽饼卷起。
Place each roll in the oven tray. 把每一个卷放在烤盤中。
Cover the rolls with bechamel sauce and parmesan cheese. 把帕尔马干酪和bechamel 酱洒最上面
Bake in preheat oven at 180 C for about 30 min. 放入预热的烤箱以约180度烤30分钟
Let sit for 10 min. 静置松驰约10分钟.
