The Cheesecake is a typical American dessert which I find really tasty. It has been for a while that I wanted  to try this recipe and yesterday afternoon I finally got some free time to spend in the kitchen. My cheese cake is a lighter version of the original recipe since I’ve reduced the quantity of cream cheese and eggs, but the result is just as good!

Ingredients (for about 12 servings): 配料(约12人份量)

For the crust: 酥皮:

  • 200 g digestive cookies – 消化饼200g
  • 1/2 cup butter (113 g) – 1/2杯黄油
  • 1/4 cup sugar (50 g)- 1/4杯杯糖

For the filling: 馅料:

  • 1/2 cup sugar (100 g) – 1杯糖
  • 250 g Cream cheese – 250克奶油奶酪
  • 2 eggs – 2个鸡蛋
  • 1 tsp vanilla extract – 香草精1茶匙
  • 2 tbsp all purpose flour – 2匙中筋面粉
  • 1/3 cup heavy cream – 80 克鲜奶油

Grease, or spray with Pam, a spring form pan. Preheat oven to 350 degrees F (177 degrees C). 将油涂或喷洒在带有弹簧扣的烤盘锅上。 让烤箱预热达到350华氏度(177摄氏度)。

In a food processor crumble cookies. Or if you like me ain’t got any food processor, just put the cookies in a zip lock bag and crumble’ em with a rolling pin

In a bowl combine the cookies (finally crushed) and sugar 把饼干和糖放在一个碗里

then pour in the melted butter 然后把倒入融化的黄油

With a fork mix all the ingredients together. 用叉子将所有的配料混合在一起

Press the crumbs evenly over the bottom of the spring form pan.  Cover and refrigerate while you make the filling. 将饼干屑均匀按压在烤盘锅底部的上面。盖起来并冷藏,以备你做馅料的时候用。

Now grab one of these bad boys…and by that I mean cream cheese… 把奶酪

In a bowl of your electric mixer place the cream cheese and add sugar 将奶油奶酪放在一个碗里.加入糖

and flour 和面粉

Beat on medium speed until smooth. 用中等的速度均匀搅打直至光滑有弹性.

Add the eggs, one at a time, beating well after each addition. 加入鸡蛋,逐个加入,均匀搅打好后再加入另一个。

Add in the vanilla extract 加入香草精

Then the whipping cream and beat until incorporated. 加入鲜奶油

and beat until incorporated 再搅打直至合为一体。

Take the crust out of the refrigerator and pour in the filling. 从冰箱拿出酥皮, 再把馅料倒在酥皮的表面。

Bake at 180 C for 20 min. Then turn it down to 120 C and bake for 50 min. Remove from the oven and let cool down. 烘培180度,烤20分钟。然后把温度调低至120度再烘培50分钟。 从烤箱中拿出来后,冷却即可。

Spread the caramel topping over the cheesecake, cover and refrigerate.  把焦糖装饰涂在奶酪饼上,再盖起来,冷藏即可。
