SF style Clam Chowder

The first time in my life I had this delicious soup was back in 2008 when I was on vacation in San Francisco (California). I remember I went to this little nice restaurant right on the beach in Monterrey and they served me the Clam chowder in a sourdough bread cup…It was just delicious!

Since I don’t know when  I will be in the States next, I have decided to make it myself. I’ve also attempted to make the sourdough but the result wasn’t great so I’m not going to post the recipe now. I’m going to give it an other try…see if it gets better 😀 This means you will have to wait at least an other week ’cause the process for making the sourdough starter is a long and difficult one…

Anyways, enjoy the Clam Chowder for now and let me know if you guys like it.

Ingredients (for 4 servings):  原料 (4人份)

  • 2 cups potatoes (chopped) – 2 杯马铃薯(切粒)
  • 1 1/2 cups mushrooms (small diced) –  11/2 杯 蘑菇(切粒)
  • 1 cup onion (chopped) – 1 杯洋葱 (切粒)
  • 1 can of clam and their liquid – 1 罐蜊肉 和里面的汤
  • 2 cups fish stock – 2 杯 鱼高汤
  • 1 cup milk and 1 cup heavy cream – 1 杯牛奶 1杯鲜奶油
  • 3 slices of bacon – 3 片培根
  • 3 tbsp butter – 3 勺黄油
  • 2 tbsp corn starch – 2 勺玉米淀粉
  • black pepper and salt – 和辣椒粉和食用盐

Chop the potatoes, place them in a bowl and add 1 1/2 cups of water. 将马铃薯切粒后放在碗中加入1 1/2 杯水。

Chop the mushrooms, onion and bacon. 将蘑菇洋葱和倍根切粒。

In a pot heat the butter and saute’ the bacon till crispy.在锅中放入黄油,将倍根炒脆。

Add the onion and some water and cook until soft.加入洋葱和一点水炒软。

Add the mushrooms and let cook for about 10 min at low-medium heat。加入蘑菇,用小-中火煮至约10分钟

Add the potatoes with their water, salt, and let simmer for about 15-20 min. 加入马铃薯(包括水),盐, 用小火煮约15-20分钟

In the meantime separate the clams from their liquid and dice the clams in smallish pieces. 同时把蜊肉和罐里的汤分开后蜊肉切粒。

Dissolve the corn starch in the clam liquid. 把玉米淀粉溶解在蜊肉汤。

Add the clam liquid and the fish stock. As soon as it heats up add the clams, milk and heavy cream and some black pepper. Let simmer for 5-10 min. 锅里倒入蜊肉汤和鱼高汤。一开水就加入蜊肉,牛奶,奶油和海辣椒粉。 用小火煮约5-10分钟

I served my Clam Chowder in the “sourdough bread” I tried to make (which wasn’t THAT sour though, lol). If you guys don’t want/have the time to make the bread just serve it in a soup bowl and enjoy it warm 🙂

One serving of Clam Chowder (without the bread) provides:

  • Protein: 8.4 g
