Homemade Ravioli

Ravioli are a type of filled pasta composed of a filling sealed between two layers of thin pasta dough.  Home making the dough is really easy and not time consuming at all. You can choose among a pretty wide variety of filling for your ravioli: with meat, fish, simple vegetables.

The one I have made today are with a ricotta and spinach filling…mmm delicious! I’ve dressed them with butter and sage, but you can also use simple tomato sauce with a sprinkle of Parmesan cheese 🙂

Ingredients (for 6 servings) 配料(约6人份量):

For the dough: 面团

  • 3 cups flour (400g) – 400克面粉
  • 3 eggs – 3个鸡蛋
  • salt – 食用盐

For the filling: 馅料

  • 150 g spinach –  150 克菠菜
  • 150 g ricotta cheese –  150 克ricotta 酪
  • 1 egg – 1个鸡蛋
  • 5 tbsp Parmesan cheese –  5汤匙磨碎帕尔马干酪
  • 1 tbsp butter – 1汤匙黄油

Place the four in a mound creating a well in the center where you will add salt and pour in the slightly beaten eggs. 将面粉筛在台面上,在中央拨出一个洞,放入鸡蛋。

Slowly pull the flour into the eggs until is all incorporated. Knead the dough by hand adding more flour on the surface. 然后搅拌搓匀。将面团搓揉均匀至光滑、柔软有弹性。台面上加一点面粉

Let the dough rest for about 30 min. In the meantime prepare the filling. Boil the spinach 将面团搓成一团后,在室温下静置30 分钟。同时开始准备馅料。将菠菜煮熟。

Squeeze out the water and cut them small. Then add the butter.将水控干,把菠菜切小块。

Add the ricotta cheese, Parmesan, salt and egg and mix all together.加入ricotta酪,2勺磨碎帕尔马干酪,食用盐鸡蛋。把所有的材料均匀搅拌一起

Divide the dough into 2 parts and roll it out very thin.把面团分成2团。把每一团成一长块。

Place small portion of the filling on one sheet of pasta two inches apart.在面皮上放馅,每份留一点距离。

Now cover with the second sheet of pasta. 用第二张面皮盖上封好

Cut the ravioli apart (I didn’t have a pastry cutter so I just used a knife)用刀或锯齿滑轮刀切出方块

Boil ravioli for about 10 min or until cooked and serve with you dressing of choice. The one in the picture are with simple butter melted with a few leaves of sage and Parmesan cheese on top. 用热水煮熟(约10分钟)。乘你选择的酱上菜即可。

One serving of undressed ravioli provides:

  • Calories: 345   (from fat 78)
  • Fat: 8.7 g
  • Carbohydrates: 50.3 g
  • Protein: 15.3 g
