Muffins with ricotta and chocolate

At least for me cooking is a relaxing activity and tonight I really needed to get some of the stress out of my body. Good thing I was alone at home, I put some music on and prepared these super soft muffins. I think they are delicious! 🙂

This is a modified version of a recipe I got from my mom. Hope you guys will like it!

Ingredients (for 12 muffins) 原料(12个松饼)

  • 1 1/2 cup flour (200 g) – 200克面粉
  • 1 cup sugar (100 g) – 100 克白糖
  • 3 eggs – 3个鸡蛋
  • 1/2 cup butter (110g) (melted but not hot) – 110 克黄油(融化的)
  • 250 g ricotta cheese – 250 克ricotta 干酪
  • 1 cup dark chocolate chips (150 g) – 150 克半甜的巧克力片
  • 1 tbsp baking powder – 1茶匙发酵粉

In a bowl place eggs and sugar. Beat until fluffy. 在碗中把鸡蛋和白糖搅打搅拌直到轻和蓬松


Add the ricotta cheese and butter. Mix well together.加入ricotta干酪和黄油,很好混合


Slowly add flour and baking powder. Mix till all ingredients are smoothly mix together. 慢慢加入面粉和发酵粉。搅动直到结合


Add chocolate chips ( I didn’t have any so I just chopped a piece of dark chocolate) 然后折叠在巧克力片


Pour about 2 tbsps of the mixture into the muffin tray. 下落大约2大汤匙面团在松饼杯子之中的面团


Bake in preheat oven at 180 C for about 15-20 min or till golden brown. 烘烤预热的烤箱以约180度烤15-20分钟,或者直到金黄褐色。
