Tomato Soup

I love soups so I’m always there trying to learn new ones.

The other day I went to this little restaurant in the French concession and their soup of the day was the Tomato Soup. I liked it so much that I’ve decided to make it at home Sunday night.

Ingredients (for 4 servings): 原料(4人份量)

  • 3 big tomatoes – 3个番茄
  • 1/2 onion, chopped – 1/2洋葱 (切粒)
  • 1 garlic glove, peeled – 1瓣蒜
  • 600 g chicken or vegetable stock – 600克鸡或蔬菜高汤
  • 5 g butter – 5克黄油
  • 2 tbsp olive oil – 2勺橄榄油
  • salt and pepper – 食用盐和黑辣椒分
  • cream (optional) – 奶油(可选)
  • fresh parsley

Place pan on medium heat, add oil and butter, stir well and allow to melt. 锅中放入橄榄油和黄油加热


Add the chopped onion and garlic stir to combine. Allow onion to sweat.加入洋葱和蒜,炒香


Chop up the tomatoes

and add them to the onion together with the stock and salt. When it start boiling covered with lid and turn heat down to a simmer. Leave to cook for 30 min. 加入切粒的西红柿,高汤和盐。开水之后把锅盖子盖上并。用小火煮约30分钟


Remove from heat and blend into rough puree with an immersion blender (TIP, when blending take care not to raise the blender out of the soup).关火把西红柿捣成糊状


Add pepper, then sieve the soup.加入黑辣椒分再漉过汤


Serve the soup in a soup bowl and add a dash of cream and chopped fresh parsley. 乘碗里上菜即可,最后加一点奶油


This soup is tasty and light, perfect to warm up the cold winter nights.
