Squirrel Cookies

When I was in Beijing I lived with this fantastic woman, who turned out not only to be one of my best friend but also a great cook! From her I got some really useful cooking tips and delicious recipes. She used to make these cookies for me and her daughter and we loved them!

This has been the first time I’ve made them because only today, when I went to Ikea to buy some equipment for the house, in the Kitchen section I’ve been able to find  a cute set of cookie cutters.

Hope you will like it!

  • 3 cups all purpose flour (375 g)
  • 1/2 cup sugar (100 g)
  • 1 egg
  • 1/3 cup  butter (80g)
  • 1 tspn yeast
  • orange aroma
  • vanilla aroma
  • some milk (about 1/2 cup)

Mix all the ingredients together (including the vanilla and orange aroma) adding milk as needed.

Work the dough till it gets smooth.

Roll it out and cut it using the cooking cutter.

Place the cookies on the oven tray (covered with baking paper)

Cook at 180 c till golden brown (about 10 min)

Let the cookies cool down, then sprinkle with powdered sugar.

For making this cookies you don’t need any special ingredient. You can find almost everything at the Chinese grocery store next to your house. For the orange and vanilla aroma, I found them at city shop in Xujiahui.
